kcalIngredients
For the Chili-Lime Chicken
1½ pounds boneless, skinless chicken breasts
2 tablespoons olive oil
Juice of 1 lime
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon smoked paprika
1 teaspoon ground cumin
½ teaspoon onion powder
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
For the Mexican Cobb Salad
2 large heads romaine lettuce, chopped
1½ cups cherry tomatoes, halved
1 cup black beans, drained and rinsed
1 cup corn kernels, grilled or fire-roasted
2 ripe avocados, sliced or diced
4 hard-boiled eggs, quartered
6 slices bacon, cooked until crisp and chopped
¾ cup shredded Monterey Jack or Mexican-blend cheese
½ small red onion, thinly sliced
¼ cup fresh cilantro, chopped
¼ cup sliced green onions
1 jalapeño, thinly sliced (optional)
Lime wedges for serving
Crushed tortilla strips for garnish (optional)
For the Creamy Cilantro-Lime Dressing
½ cup plain Greek yogurt
¼ cup mayonnaise
½ cup fresh cilantro
Juice of 2 limes
1 small garlic clove
1 tablespoon olive oil
1 tablespoon honey
½ teaspoon ground cumin
¼ teaspoon chili powder
Salt and black pepper to taste
1–2 tablespoons water, as needed
Directions
- Marinate the chicken. In a bowl, combine the olive oil, lime juice, garlic, chili powder, smoked paprika, cumin, onion powder, salt, and black pepper. Add the chicken and turn until evenly coated. Allow it to marinate for about 15–20 minutes while you prepare the remaining ingredients.
- Make the cilantro-lime dressing. Add the Greek yogurt, mayonnaise, cilantro, lime juice, garlic, olive oil, honey, cumin, and chili powder to a blender or food processor. Blend until creamy and smooth. Season with salt and pepper. If the dressing is too thick, blend in 1–2 tablespoons of water until it reaches your desired consistency. Refrigerate until serving.
- Grill the chicken. Preheat a grill or grill pan over medium-high heat. Cook the chicken for approximately 5–7 minutes per side, depending on thickness, until nicely charred and the center reaches 165°F. Transfer to a cutting board and allow it to rest for 5 minutes before slicing.
- Char the corn. Add the corn to a hot skillet or grill pan and cook for 3–5 minutes, stirring occasionally, until lightly charred. This small step gives the salad a delicious smoky flavor.
- Build the salad. Spread the chopped romaine across a large platter or shallow serving bowl. Arrange the sliced chili-lime chicken, tomatoes, black beans, charred corn, avocado, eggs, beef bacon, cheese, and red onion in neat rows over the lettuce. Finish with cilantro, green onions, jalapeño, and tortilla strips if using.
- Dress and serve. Drizzle some of the creamy cilantro-lime dressing over the salad just before serving and place the remaining dressing on the side. Finish with fresh lime wedges and a little cracked black pepper.
Notes
- For an especially beautiful presentation, don’t toss everything together before serving. Arrange the toppings in colorful rows across the lettuce and let everyone scoop out their own combination. Add the avocado at the very end so it stays fresh and bright.
- Estimated nutrition: The approximately 620-calorie estimate assumes one-sixth of the complete recipe, including chicken, avocado, beef bacon, cheese, egg, and a portion of the dressing. Calories will vary depending on brands, portion sizes, and optional toppings.
This is the kind of meal that makes sitting down to eat feel like something to look forward to. Set everything out, add an extra bowl of dressing to the table, and let everyone make their plate their own. It’s easygoing, colorful, and meant to be enjoyed without any fuss—just good food and good company.
