Ingredients

  • For the Cake

  • 2½ cups (315g) all-purpose flour

  • 2 teaspoons baking powder

  • 1½ teaspoons baking soda

  • 2 teaspoons ground cinnamon

  • ½ teaspoon ground nutmeg

  • ¼ teaspoon ground cloves

  • 1 teaspoon salt

  • 1 cup (200g) granulated sugar

  • 1 cup (220g) light brown sugar, packed

  • 1¼ cups vegetable oil

  • 4 large eggs, room temperature

  • 2 teaspoons pure vanilla extract

  • 3 cups finely grated carrots (about 5–6 medium carrots)

  • 1 cup crushed pineapple, well drained

  • ¾ cup chopped pecans or walnuts (optional)

  • ½ cup sweetened shredded coconut (optional)

  • ½ cup raisins (optional)

  • Cream Cheese Frosting
  • 16 oz (2 blocks) cream cheese, softened

  • 1 cup (2 sticks) unsalted butter, softened

  • 4½ cups powdered sugar

  • 2 teaspoons vanilla extract

  • Pinch of salt

Directions

  • Step 1: Prepare the Oven
  • Preheat oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans or line them with parchment paper.
  • Step 2: Mix Dry Ingredients
  • In a medium bowl whisk together:
  • Flour
  • Baking powder
  • Baking soda
  • Cinnamon
  • Nutmeg
  • Cloves
  • Salt
  • Set aside.
  • Step 3: Mix Wet Ingredients
  • In a large bowl combine:
  • Granulated sugar
  • Brown sugar
  • Vegetable oil
  • Beat until smooth.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in vanilla.
  • Step 4: Combine
  • Gradually add the dry ingredients into the wet ingredients.
  • Mix only until combined.
  • Do not overmix, or the cake can become dense.
  • Step 5: Fold in the Good Stuff
  • Using a spatula gently fold in:
  • Grated carrots
  • Crushed pineapple
  • Pecans or walnuts (if using)
  • Coconut (if using)
  • Raisins (if using)
  • The batter will be thick.
  • Step 6: Bake
  • Divide batter evenly between the prepared pans.
  • Bake for 32–38 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs.
  • Do not overbake.
  • Step 7: Cool
  • Allow cakes to cool for 15 minutes.
  • Remove from pans and cool completely on a wire rack before frosting.
  • Cream Cheese Frosting
  • Beat the butter and cream cheese together until smooth and fluffy (about 3 minutes).
  • Mix in:
  • Vanilla
  • Salt
  • Slowly add powdered sugar, one cup at a time.
  • Beat another 2–3 minutes until light and creamy.

Notes

  • Assemble
    Place one cake layer on a serving plate.
    Spread a generous layer of frosting.
    Add the second layer.
    Frost the top and sides.
    Garnish with chopped pecans, walnuts, toasted coconut, or finely grated carrot curls.
  • Baker’s Secrets for an Extra Moist Cake
    Use freshly grated carrots instead of pre-shredded carrots—they contain more moisture and blend better into the batter.
    Drain the pineapple well so it adds moisture without making the cake soggy.
    Use oil instead of butter for a softer, moister crumb.
    Avoid overmixing once the flour is added.
    Remove the cake from the oven as soon as a toothpick comes out with a few moist crumbs.
    Wrap the cooled cake layers in plastic wrap and chill overnight before frosting for even better texture and flavor.
